Pork Chops and Seasoning:

  • 2 bone-in pork chops, about 1 inch thick

  • 2 teaspoons Dijon mustard

  • $\frac{3}{4}$ cup panko bread crumbs

  • 1 teaspoon salt

  • $\frac{1}{2}$ teaspoon black pepper

  • 1 teaspoon garlic powder

  • $\frac{1}{2}$ teaspoon onion powder

  • $\frac{1}{4}$ teaspoon cayenne pepper

  • 1 tablespoon rosemary, finely chopped

  • 1 tablespoon fresh thyme

  • 2 tablespoons olive oil

  • 1 tablespoon butter

    Apples and Accompaniment:

  • 3 medium apples (honeycrisp or fuji), sliced $\frac{1}{2}$ inch wedges

  • 1 small red onion, sliced thinly

  • 2 tablespoons brown sugar

  • 1 teaspoon cinnamon

  • $\frac{1}{2}$ teaspoon salt

  • 2 teaspoons apple cider vinegar

  • Fresh thyme
